Roast beef is one of those meals that tastes like it took a lot more effort than it does, especially if you cheat while making it like I do. I take full advantage of my slow cooker while making roast beef. Using a slow cooker for roast beef results in a juicy, delicious roast.
I want to start this post off by saying I am not one for meat that looks in any way bloody. I am one to ask for my meat killed and then killed again. So I apologize in advance if overcooked meat offends you.
Ok, so now onto the recipe!
This is actually more of a method than a recipe.
I like to buy our roasts from Costco. There are a few different roast available but we usually buy the Eye Round because it is a great value. The roasts usually come in a two pack. I look for a package that contains 2 larger roasts, which usually costs me around $30-$35. The large roasts can usually be cut in half and we will freeze the remaining roasts for future meals. This makes the cost per roast, typically, under $9. $9 for the protein portion of a meal to feed a family of 6 is a great deal!
We prepare our roast very simply. We season the roast with salt and pepper. Sometimes we will add thyme or an Italian herb blend. Once it is seasoned, we put it in the slow cooker and let it cook all day.
This is the slow cooker we have. We have had this brand of slow cooker since we got married, which was over 10 years ago. Approximately 3 years ago the slow cooker did die on us, but we replaced it with the same model because we were so pleased with the functions and performance of the slow cooker.
After a few hours of cooking, I like to peak into the slow cooker. If there is not enough liquid in the bottom then I will add some water or bone broth to help aid the cooking process. Adding a bit of liquid also gives you more juices in the end. We always make gravy to go along with our beef roast because it is just so delicious.
Who doesn’t like gravy?
We typically let our roast cook for 6-8 hours on low, depending on the size of the roast. If the roast is larger than we will cook longer. The good thing about this slow cooker is that it has a temperature probe so you can use it to cook it until it reaches the temperature you desire.
One the roast is cooked, I take it out of the slow cooker and let it sit on the counter for approximately 15-20 minutes.
In all honesty, it rests for as long as it takes me to make the gravy.
We serve our beef with all sorts of different sides. Usually, we serve roast beef with potatoes. Mashed potatoes are always a favourite because the boys love putting gravy on mashed potatoes. We have also cooked the potatoes in the slow cooker with the beef itself. This is a great option as it cuts down on the dishes used.
Some days, especially on busy days where we are out running around, the beef cooks a little too long.
It is still delicious, but you cannot slice it like you would a traditional roast beef. On those days, we just take two forks and shred the beef. We then put the beef back in the slow cooker (turned off) and let it sit in the aux jeux for a few minutes.
We cook a roast every few weeks. It is such a delicious treat and a go-to for our family on a busy day. I love being able to put it in the slow cooker and forget about it!
